Ingredients

  • 10 egg yolks
  • 2 whole eggs
  • 300 g sugar
  • 220 ml water
  • 1 cinnamon stick
  • 1 tsp ground cinnamon

Step-by-step method

  1. Simmer sugar, water and cinnamon stick into a lightly thickened syrup.
  2. Beat yolks and whole eggs just enough to combine, without excessive foam.
  3. Remove cinnamon stick and slowly pour eggs into gently simmering syrup, stirring lightly.
  4. Cook over very low heat until soft egg strands form and the eggs are fully cooked.
  5. Transfer to a shallow dish, dust with cinnamon and cool before serving.
A home-style version; regional and family variations are common. Check cooking times and food doneness before serving.
