Ingredients

  • 1.2 kg pork ribs
  • 450 g day-old bread
  • 5 garlic cloves
  • 1 bunch coriander
  • 200 ml white wine
  • 1 tsp Portuguese red-pepper paste
  • 90 ml olive oil
  • Salt and pepper

Step-by-step method

  1. Marinate pork ribs with wine, red-pepper paste, garlic and pepper for an hour in the fridge.
  2. Roast ribs at 190°C for about 60–75 minutes until fully cooked and tender.
  3. Tear and soak bread in just enough hot water to soften it.
  4. Warm olive oil with garlic, add drained bread and stir into a cohesive yet moist mixture.
  5. Fold chopped coriander into migas and serve alongside the ribs.
