Ingredients

For 4 servings.

1 cup = 240 ml; 1 tablespoon = 15 ml; 1 teaspoon = 5 ml.

  • 400 g cold cooked brown rice
  • 300 g well-drained firm tofu
  • 1 medium onion, very finely chopped
  • 80 g chopped walnuts
  • 3 tbsp soy flour, or chickpea flour
  • 1 tsp dried sage
  • 2 tbsp chopped parsley
  • 60 g vegan breadcrumbs, plus extra if needed
  • 1 tbsp olive oil for the onion, plus a little for brushing
  • 200 g salad leaves
  • 2 tomatoes
  • Juice of ½ lemon
  • Salt and pepper to taste

Step-by-step method

  1. Heat the oven to 180 °C and line a baking tray. Soften onion in one tablespoon of oil for 6–8 minutes, then cool slightly.
  2. Mash tofu with a fork and combine with rice, onion, walnuts, flour, sage and parsley. Season and mash some rice to help the mixture hold together.
  3. Squeeze a small portion in your hand. If it will not bind, add a tablespoon of water; if too wet, add breadcrumbs gradually. Rest the mixture for 10 minutes.
  4. Shape into 12 croquettes or small patties. Coat in breadcrumbs, arrange on the tray and lightly brush with oil.
  5. Bake for 25–30 minutes, carefully turning halfway, until firm and golden. Let settle for 3 minutes before lifting off.
  6. Wash leaves, cut tomatoes and dress the salad with lemon juice. Serve three croquettes per person with a generous portion of salad.
✦ Kitchen tip

Adapted with less onion, cooked first, and walnuts instead of pecans. The timing starts with cooked, chilled rice; it excludes cooking and cooling rice from scratch.

A home-cooking adaptation. Timings are approximate and depend on ingredients and equipment. The photo may show different garnishes or presentation.
